The excitement around the release of Finding Dory, the sequel to one of my favorite movies of all time Finding Nemo, is buzzing all around New York City! It opens in theaters nationwide tomorrow, including all throughout Manhattan, and Nature’s Harvest, one of our favorite and most delicious kinds of breads, is celebrating in a big way with some Finding Dory inspired recipes!

Shell-licious French Toast Bites
Ingredients:
½ cup real maple syrup
½ cup blueberries
8 slices Nature’s Harvest® Honey Wheat Made with Whole Grain Bread
2 large eggs
2/3 cup low fat milk (1%)
1 teaspoon vanilla extract (optional)
1/4 teaspoon ground cinnamon (optional)
Nonstick cooking spray
One Shell-shaped Cookie Cutter
Directions:
To make the syrup, combine the maple syrup and blueberries in a small sauce pan. Heat over medium high, Stir frequently until some of the blueberries have popped and the syrup has turned blue. Keep warm.
Coat a skillet with nonstick cooking spray and heat over medium heat.
Cut Nature’s Harvest®Bread slices into shells with cookie cutter ( one shell per bread slice)
Whisk together eggs, milk, vanilla, and cinnamon (if using) until completely blended and dip bread shells into mixture, turning to coat completely on both sides.
Lay bread shells in heated skillet and cook until golden brown, turning once. Spoon syrup over the bread shells to serve.
(Hint: You can keep the shells warm in a 350-degree oven until the rest of the toast is cooked.)

Cheesy Egg Breakfast Boats
Ingredients:
4 slices Nature’s Harvest® Stone Ground 100% Whole Wheat Bread
Nonstick cooking spray
2 tbsp. shredded low-fat Cheddar cheese
8 spinach leaves
2 slices turkey bacon
4 eggs
Kosher salt to taste
Fresh chives, chopped (optional)
Directions:
Preheat oven to 375 degrees and spray 4 cups in a regular size muffin tin with nonstick cooking spray.
Cut crusts off 4 slices of Nature’s Harvest® Bread and firmly press one slice into each muffin cup.
Wrap 2 slices of turkey bacon in a paper towel and microwave for 1 minute to cook halfway; cut each slice in half.
Top each bread cup with 2 spinach leaves, equal parts shredded low-fat Cheddar cheese and 1/2 bacon (press everything down firmly to make room for the eggs).
Crack one egg into each muffin cup, sprinkle with a pinch of kosher salt and bake for 20 minutes until each egg white is set.
Remove from oven and sprinkle with fresh chives, if using. (remove boats from muffin tin while still warm to prevent sticking)

Peanut Butter & Jellyfish Sandwich
Ingredients:
4 slices Nature’s Harvest® Stone Ground 100% Whole Wheat Bread
1 tbsp. natural peanut butter
4 tsp. 100% fruit spread
2 sticks light string cheese
4 banana slices
4 raisins
2 small slices celery
Special Tools:
Kitchen scissors and a round drinking glass (approx. 3-inch diameter)
Directions:
Spread equal amounts natural peanut butter and fruit spread on Nature’s Harvest® Bread to form 2 sandwiches.
Cut into jellyfish shapes with round drinking glass, cutting curved bottom with kitchen scissors.
Pull apart string cheese into strips and arrange underneath the sandwiches to resemble jellyfish tentacles. Use banana slices and raisins for eyes and a slice of celery for a smile.
