We fell in love with Pokéworks earlier this year, when the fast-casual favorite opened up its brand new location in the heart of Union Square. They are part of a bunch of new spots that are taking the phrase “fast casual” and elevating them in terms of the quality of ingredients you can devour during your lunch break and more. Top Chef star Sheldon Simeon, who has been a partner of the brand for quite some time, has just debuted his second signature bowl with them.

If you aren’t familiar with Pokéworks, let’s get you caught up. Pokéworks prides itself on Poké (a traditional Hawaiian dish where chunks of tuna are marinated in soy and sesame) being the base for most of their dishes, with other tasty items building off of the Hawaiian based dish. This includes everything from shrimp to edamame, scallops to crab salad and more.

His first bowl that he developed with Pokéworks was called the Coco Bora bowl. This came with Bora (a light and mild white fish) is mixed with ginger, red onions, Thai chili, a Kinilaw sauce (coconut vinegar, coconut milk, black pepper, lime juice), and more. It was inspired by Sheldon’s Filipino background and Pokéworks dedication to offering underutilized sustainable fish varieties.
His second bowl packs on the punch and flavor, similar to what he did with the Coco Bora bowl. This time around, it’s called The OG Bowl. It comes with sweet garlic sauce, togarashi (Japanese chili powder), furikake, watercress, and more.

Kudos to Sheldon Simeon on another delicious and original bowl that you must try for yourself. For more information, please check out their official website.
