January marks the month of Veganuary — a campaign that encourages people all around the world to take a pledge to try and eat plant-based / vegan for not only the whole month but as long as possible. Veggie Grill’s Co-Founder T.K. Pillan chatted with Manhattan Digest about why this is so important in the modern world we are living in today.

We chatted with T.K. about his initiative and more in our chat below.
What are your thoughts on Vegan’s choices in 2021? Do you still think its lacking?
There has never been a more exciting time for people to explore a plant-based diet. There are so many great choices now that are innovative, creative and most importantly, delicious. Pretty much anything that someone craves…is available in a vegan / plant-based version. For example, we recently added the classic tuna melt to our menu as well as a Reuben on Rye. These sorts of options are making it extremely easy today for people to enjoy what they love, in a plant-based diet.
How does Veggie Grill help ensure that meals are plentiful and flavorful and that vegans have lots of options to choose from?
Our passion is to help people begin, advance and embrace their plant-based journey. We do this by delivering the best the plant-based world has to offer with familiar and accessible menu items. Our VP of Food and Beverage, Kajsa Alger, a former corporate chef at Border Grill and Ciudad restaurants helps us consistently create dishes that we believe our guests will love. You can go as healthy as you want or as indulgent as you feel like being that day.

Outside of that do you plan on introducing any new dishes this year?
Yes, we are always adding on new innovative menu items. For Chinese New Year coming up in February, we will be offering Orange Chicken, which we are really excited about. Also, as a way to bring more plant-based experiences to people, we have just launched Más Veggies Taqueria [eatmasveggies.com], a national virtual Mexican restaurant, offering all plant-based and planet-friendly food in partnership with Beyond Meat® for delivery-only. Our innovative menu offers a range of crave-worthy tacos, burritos, bowls, and nachos with a choice of Crispy Poblano Chickin’, Shredded Jackfruit Chipotle Carnitas, Cauliflower Asada, Savory Tex-Mex Taco Meat and Crispy Baja Fish.
